I don’t know about you, but many nights after dinner is over I want a dessert, but I’ve failed to plan for one. Usually I whip up an Apple Crisp in a hurry, allowing it to bake while we eat. But lately, I’ve wanted something a little more comforting. That’s when I remembered the rice pudding Mama made when I was a child.
Comfort food should remind you of the comforts of growing up. You remember ~ that time in your life when you had very few responsibilities? Someone else did all the worrying? Yeah, that time. That’s what a comfort food should do. It’s a little mini escape. I’ve been wanting one of those lately. That’s when I remembered Mama’s Rice Pudding.
So, do you need an escape? A little comforting? Need a dessert in hurry? Leftover rice in the fridge? Easy Stove Top Rice Pudding to the rescue. It’s easy and comforting and delicious. Easy Stove Top Rice Pudding with Cherries is right up there with my Apple Bread Pudding for a comfort dessert.
All you need is 2 cups of cooked rice, eggs, milk, butter, cinnamon, vanilla and sugar. And a bag of dried cherries.
With very little effort you can have a delicious comforting dessert in no time. Serve warm with whipped cream. Great for breakfast, too!

Ingredients
- 2 cups cooked rice
- 2 cups milk, divided
- 1/3 cup sugar
- 1 egg
- 1/4 tsp salt
- 1 tsp Vanilla
- dash of cinnamon
- 1 cup dried cherries
- 1 TBLS butter
Instructions
- In medium saucepan, combine cooked rice, 1 1/2 cups milk, sugar and salt. Cook, stirring over medium heat for about 15 minutes. It should be creamy. Combine 1/2 cup milk with beaten egg. Add to creamy mixture. Add cherries and continue to cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter, vanilla and cinnamon. Serve warm garnished with whipped cream.
