Sunday Morning, Saturday Morning…Any morning, these pancakes are a hit. I don’t know about you, but my counter top isn’t complete without several ripened bananas, past their prime, sitting around. Normally I would make banana muffins or a loaf of banana bread, but if I want something quick….. I go with Sunday Morning Banana Blueberry Pancakes with real butter, drenched in maple syrup and topped with fresh blueberries and sliced bananas. You just can’t beat it.
Early one morning, before my husband found his way to the coffeemaker, I decided to make pancakes…but not just any pancakes. I decided the new bottle of maple syrup, I had just bought, deserved something a little more special. That’s when the bananas on the counter caught my attention. Why not?
Once I had the batter mixed, I saw fresh blueberries in the fridge. So I washed a few and sprinkled them top. It’s a perfect combination.
I’m sure I don’t have to tell you how very delicious these are. The photos speak for themselves.
The next time you see bananas waving to you across the counter….do yourself and your family a favor and make Sunday Morning Banana Blueberry Pancakes. You’ll be glad you did and so will they. 🙂
Garnish with fresh banana slices, fresh (or frozen) blueberries and REAL MAPLE SYRUP. And don’t forget the REAL BUTTER.
There’s nothing more to say except….YUM!
Ingredients
- 1 cup Self Rising Flour
- 1 cup buttermilk
- 1 egg
- 1 TBLS sugar
- 1 TBLS Melted butter
- 1 ripened mashed banana
- 1 cup blueberries
Instructions
- Combine dry ingredients in a mixing bowl.
- Combine wet ingredients in a bowl, including mashed bananas (reserve blueberries)
- Stir wet ingredients into dry ingredients and combine until just mixed. It will be lumpy.
- Spoon about 1/4 cup onto 350* (med heat) UNGREASED griddle. It should make approx. 8- 4inch pancakes. Sprinkle blueberries on top. Cook unit they begin to bubble. FLIP but do NOT mash pancake down with spatula. We want fluffy pancakes! Allow to cook flipping once more, barely.
- Serve with butter, maple syrup, additional sliced bananas and blueberries. Enjoy!
