The Joy of Leftovers

I’ve had a craving for Eggplant Parmesan since my daughter stopped by with EP carryout last week. I know, I could just go out for Eggplant Parmesan tonight. There’s a great little Italian Bistro nearby,  but, you see, one serving from a restaurant does not provide leftovers that are vital to life at my house…I live for leftovers. In fact, you could say, in some ways, I cook for leftovers. I don’t mind messing up my kitchen as long as I know there will be leftovers for tomorrow.

Just the thought of  tomorrow,  reaching in the fridge and pulling out something that the flavors have had all night to blend and meld together  makes the unpleasant task of cleaning the kitchen tonight worth it.  Just to savor the taste  one more time without having to mess up my kitchen…well, you can understand why I relish leftovers.

And then there are the days I just I don’t feel like cooking. (That can be our secret)  There are so many things I need to accomplished during the day that I don’t always have time to cook a full blown meal.  We’re  still going to be hungry. Leftovers are a lifesaver.  If I can I try to work it so there’s something magnificent in the  refrigerator….then for that one little moment I can feel just a tinge of pride THE Proverbs 31 woman must have felt …

Like the Proverbs 31 wife…I try to plan ahead.    But mind you, I’m still struggling to reach it. Some days, some weeks, some months,  some years I do better than others…Still I try. It’s a goal of mine.
