Eggs in a basket, Eggs in toast, Toad in a hole, Eggs in Jail….It matters not what you call them. Whatever you call them, I call them delicious! Did you sleep in this morning and want something special to start your day off right? Eggs in a Basket, Bacon in the oven, fresh strawberries and perfect cup of coffee are a perfect beginning to a perfect day. This has become one of my most favorite breakfast dishes. Right up there with my French Toast! I’ll post that recipe soon!
I began with Texas Toast bread. It’s a little thicker and it made a perfect ‘basket’ to hold my eggs, but any bread will do.
Butter, then cut a circle out of the center of each slice of bread.
Place in a lightly buttered frying pan and crack an egg into each hole.
Fry as usual and flip over when the egg whites are cooked about half way through.
Salt and pepper to taste.
Arrange on plate. I like to garnish with a sprinkling of dill weed. Serve with bacon cooked in the oven and fresh fruit.
