It’s cold again and today’s menu says “Sausage and Lentil Soup”…aka ” Carrabbas Sausage and Lentil Soup.” No need to go out in this weather to enjoy a steamy bowl of hearty Sausage and Lentil Soup. In an hour or so, you can have it homemade with enough to freeze or to enjoy for a day more. And it’s simple to make.
Italian sausage, 6 large links – remove meat from casings; One pound of ground turkey; onion, celery, garlic, carrots, chopped tomatoes, one zucchini, tomato sauce, basil, oregano, parsley, salt and pepper. Chicken stock. Oh, and your probably going to need a bag of lentils….
Brown meat with onion, celery, garlic and carrots. Add stock and remaining ingredients…except the zucchini. Simmer about a hour, or until lentils are tender. Adjust seasonings to your taste. Add zucchini during the last 20 mins of cooking.
Perfect for a cold Winter’s day….Hearty and delicious…and yes, it tastes just like Carrabbas….
Ingredients
- Italian sausage, 6 large links - remove meat from casings
- One pound of ground turkey
- 1 1/2 cups onion, chopped
- 1 cup celery, chopped
- 6 cloves garlic, chopped
- 1 cup carrots, chopped
- 8 cups chicken stock
- 1 1/2 cups dry lentils
- 28 oz can chopped tomatoes
- 1 small can tomato paste
- 1 tsp basil
- 1 tsp oregano
- 1/2 tsp parsley
- 1 tsp salt
- 1 tsp pepper
- 1 chopped zuchinni
Instructions
- Brown sausage and turkey in one tablespoon olive oil. Add onion, celery, carrots, and garlic. Cook until onion is tender. Add chicken stock, lentils, spices, tomatoes, tomato paste, salt and pepper. Simmer for about an hour. Add additional water if needed. I probably added 2-3 cups water. During last 20 mins of cooking, add chopped zucchini. Cook until zucchini is tender. Adjust seasonings to suit your taste. Enjoy!
