Ok, this is going to be short and sweet…
I don’t know what’s happening to me, but lately, I can’t seem to get enough peanut butter. I meant to look up to see what nutritional value there is in Peanut Butter, but haven’t yet. I’ve always heard that our bodies crave certain things because there is something missing our diet. Well, I should have the peanut butter base covered by now. Whatever it is. Last night I decided to make truffles. They’re so simple to make. Only 4 ingredients and that’s all. Ok, can you bring a cup of cream to a boil and remove it from the heat?
Then add a bag of Reece’s peanut butter chips, 3 tablespoons of butter and 1/2 tsp vanilla? Stir until melted. That’s it. Then chill. You and the mixture. Chill.
You can just let it stand for about 4 hours to completely cool and roll out… I put mine in the refrigerator over night. Then, this afternoon, rolled into 1 inch balls. Place truffles in freezer for 1 hour. Melt chocolate. Roll in chopped peanuts or dip in melted chocolate. I did both.
The texture of the truffle is perfect. The little chocolate covering is perfect. And the fact that it is so simple, perfect….tell me again why I don’t make these more often???
Prepare to be amazed. Something so simple, can taste so delightful. Store them in the refrigerator. Best served at room temperature.
Ingredients
- 10 oz Reece's Peanut Butter Chips
- 1 cup cream
- 3 Tablespoons Butter
- 1/2 teaspoon vanilla
- Topping:
- 3.5 oz chocolate, melted I used Lindt's 60% cocoa
- or
- 1 cup chopped peanuts
Instructions
- In a sauce pan, bring cup of cream to a boil. Remove from heat and add chips, butter and stir until melted. Stir in vanilla. Allow to cool for at least 4 hours or overnight in refrigerator.
- Roll out into 1 inch balls. Freeze 1 hour on tray.
- Heat 3.5oz chocolate over medium heat in double boiler. With fork, dip truffle into chocolate and pace on wax paper to cool.
- Or roll into chopped nuts.
- Serve at room temperature.
- Store in refrigerator.
- Recipe makes approximately 30 truffles.
