I don’t know about you, but heating up the kitchen everyday  in the Summer is not my idea of fun.  So, I try to set aside a day to make salads and various cold side dishes to add to my Summer lunches. I keep them in the fridge and then on any given day, I can pull something tasty to add variety to my lunch menu.

Spiced peaches are one of my favorite things to have in the fridge during the Summer. One making keeps for several weeks. And when fresh peaches aren’t in season, you can use canned ~ so you can make them year round….I’m all about that.

Making them is a breeze. You simply mix all the ingredients, except the peaches, in a pan. Bring to a boil and simmer. Pour over bowl of peaches and allow to cool completely. After they are completely cooled,  I like to put mine in an old jar, covered tightly and place in fridge. You can store them in any air tight container, in fridge. They will keep up to 2 weeks, or so.

Ingredients

  • 3 29oz cans Peach halves
  • 1 cup sugar
  • 1/2 cup Apple Cider Vinegar
  • 4 Cinnamon sticks
  • 2 tsp whole Cloves

Instructions

  1. Drain peaches, RESERVING syrup. Combine syrup, sugar, vinegar and spices in a sauce pan and bring to a boil. Reduce heat to a simmer and cook 10 minutes.
  2. Place peaches in a heat proof bowl and pour hot syrup over. Cool completely. Put peaches with syrup into air tight container and refrigerate overnight. I like my old jar with lid. Will keep several weeks in refrigerator. Enjoy!
