Pumpkin Pecan Dessert

I’ve read several complaints from friends who say the recipes they pin on Pinterest aren’t very good. Personally,  I’ve only found one or two recipes so far, that were just ok.  Most have been really good.  And even the ones I didn’t care for,  were passable.

The kids called and said they would be coming by for Sunday Dinner.  I was baking a ham so that wasn’t a problem. What I needed was a dessert. A last minute dessert. I had seen a recipe on Pinterest but was really skeptical.  One of the recipes I had given a thumbs down to on Pinterest called for using a cake mix.  It was mediocre at best.

But I kept coming back to this recipe and frankly,  it was the only one that sounded tasty. I decided to take the plunge. I thought with a little tweaking it would be fine. I’m all in to pumpkin recipes this time of year, so I had all the ingredients.  But, still,  nothing is more frustrating to me than to try something new and being disappointed.

Oh boy, no one was disappointed today. It was delicious! So let me share… I only slightly tweaked the recipe I pinned: ~  I used pecans, added additional favoring for my Praline Pecan Pumpkin Dessert….Try it ~ you’ll like it!    But let me warn you, small – start with a small piece. You can always get more later. ~~

Praline Pecan Pumpkin Dessert

Ingredients

  • 1 can Pumpkin ~ NOT the pumpkin pie filling
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 Large can Evaporated Milk
  • 1 TBLS Pumpkin Pie Spice
  • 1 1/2 cup pecans, chopped
  • 1 1/2 sticks melted butter
  • 1 box Yellow or Butter Cake mix

Instructions

  1. Preheat oven 350*
  2. Lightly grease 9 x 13 Pan
  3. Mix pumpkin, milk, eggs and sugar in large bowl until blended. Pour into prepared pan. Sprinkle dry cake mix evenly over top of mixture. No need to mix. Sprinkle with chopped pecans. Pour melted butter over top.
  4. Bake 350* for approx. 50 minutes or until knife comes out clean. Cool slightly then cut into squares to serve.
  5. Serve warm or cool with whipped cream. Enjoy!!!
