Mini Macaroni and Cheese with Bacon

I’ve been pondering awhile the perfect breakfast food for my grandchildren. I was looking for something to provide plenty of nutrition and energy to start the day. And if need be, an after school snack, to get them through ball practice and last them until supper. It was about the time I posted my Homemade Macaroni and Cheese that it dawned on me that with a few adjustments to the recipe, it would be the perfect breakfast food. The kids all love my macaroni and cheese and by cooking it in individual portions and adding a much loved bacon my Mini Macaroni and Cheese with Bacon would be perfect and everyone would be happy.

Ritz Crackers, butter and cheddar cheese make the crust that holds this baby together.  I used muffin top pans to make mine but you can make yours in a regular muffin tin. I love that these are individual servings that heat up in a minute in the microwave. No need to worry about not having time for a good breakfast in the morning as you fly out to school. This recipe has eggs, milk, butter, cheese and bacon.

I pulsed the crackers with 2 tablespoons of butter and 1 cup of cheddar cheese. Then divided it evenly in my muffin top tin. I had enough for 18. I used a pyrex bowl to press the crumb along the bottoms and sides.mini mac and cheese mixture

The macaroni and cheese is a thicker version of my Homemade Macaroni and Cheese. I used less milk and more cheese.

I divided the cheese mixture and spooned on top of the crusts.

Then I topped with crumbled Oven Cooked Bacon.     Bake at 350* for about 25 minutes.

Dust with Dill Weed. Garnish with parsley.

And you can feel good about serving good ingredients to your family

And no longer worry that you don’t have time to make a good breakfast for the children as the run out the door to school or ball practice.

Not to mention the fact these make tasty little appetizers or party food….just make them in miniature muffin tins and shorten the cook time to about 12-15 minutes

I’m so happy that everyone loves my little Mini Macaroni and Cheese with Bacon. It’s a win-win at my house!

Mini Macaroni and Cheese with Bacon

Ingredients

  • 2 cups dry elbow macaroni
  • 2 1/2 cups sharp cheddar cheese, grated
  • 1/2 cup milk
  • 3 eggs
  • 1 TBLS prepared Mustard
  • 1/2 stick butter (1/4 cup)
  • 1 lb.bacon, cooked crisp and drained..crumbled
  • Crust:
  • 2 cups crushed Ritz Crackers
  • 2 TBLS butter
  • 1/2 cup cheddar cheese, grated

Instructions

  1. Cook macaroni according to package. Drain and add cheese, eggs, milk, mustard and butter. Salt and pepper to taste.
  2. Pulse the crust ingredients in food processor. Press into 12+ muffin top tins (or muffin tins). Top with macaroni mixture. Top with crumbled bacon.
  3. Bake 350* 20-25 minutes.
  4. Enjoy!
