Easy German Pancake for a Special Occasion Breakfast

A few years ago, for our Christmas Brunch,  I made this Easy German Pancake for everyone. It was a side dish that turned into the main dish….and luckily they are so quick and easy to make it was no problem whipping up more,  for our 10 grandchildren and families.  

Since that Christmas Day, German Pancakes have become a special breakfast dish in our family. They’re great any time, of course,  but they make special occasions, extra special.  We get requests for them on family vacations, birthday breakfasts and any other special days.  But then,  they also make your family feel special, regardless of what’s going on. I’m sure they’ll become your family favorite, too.

Before I get started…..I have a new goal for my blog this year…2020…coming up…and that is to make my craft/recipe posts as simple as possible….so, unless it’s the best story in the world,  I won’t bore you with family stories about my grandmother and how I learned this or that from her while she milked cows in Missouri or lessons learned while sitting on my other grandmother’s lap, in front of her old trusty singer sewing machine, in Cuthbert, GA while she cut out paper dolls for me.

Nope, my plan is to cut to the chase, so you can get on with the project/recipe at hand.

Now doesn’t that just thrill your soul? I thought so.

Notes on this recipe:

*You can make these in a casserole dish. Or you can make them in an oblong cake pan. I prefer to make them in my cast iron skillet. I just do.

*****DO NOT OVER MIX.   mix gently, just until combined…..

*No,  you do not have to use fruit.  If you want to make these and don’t have fruit on hand… just use syrup or powdered sugar alone.

 Ready? 

Easy German Pancake

Ingredients

  • 1/2 cup all purpose flour
  • 3 eggs
  • 1/2 cup milk
  • 3 TBLS melted butter, divided
  • 1 TBLS sugar
  • 1/4 teaspoon salt
  • Topping:
  • A TBLS of powdered sugar for dusting
  • Fruit of choice, Blueberries, Strawberries, raspberries...any fruit you like
  • Syrup

Instructions

  1. Preheat oven to 450* Add one tablespoon of melted butter to cast iron skillet. Set aside.
  2. Whisk together eggs and milk, remaining butter, salt and sugar. Incorporate flour. Be careful not to over mix. It will be tough and spongy if you stir too much.
  3. Pour batter into skillet and bake for 12-18 minutes. Until lightly brown on edges. It will rise quite a bit in the pan. Remove from oven.
  4. Dust top with powdered sugar. Serve with your choice of fruit....we like blueberries and raspberries. Any fruit will do. I top with a drizzle of maple syrup. Enjoy.
