Most of my favorite salads include grapes. I put them in almost every tossed salad I make. I love them. They are the perfect combination of crispiness and sweetness. A few nights ago, I decided to make a salad of the grapes I’d found stashed in the back of the refrigerator. I’ve tasted ‘grape salad’ at dinners we’ve attended before and I always thought something was missing. It was just a little boring. Mostly a mixture of sour cream and cream cheese. I decided to work on the recipe and add a little zing…. I did some experimenting and this is what I came up with…a really Delicious Grape Salad!
I started with 4 cups of sliced red grapes. Any seedless grape will do, but I prefer the red. I always cut my grapes and cherry tomatoes in half when using in a salad. I personally don’t like to bite into a cherry tomato and squirt the person across the table and I prefer not to be squirted either! And it just seems more lady -like not to put a whole grape or tomato in my mouth, at once. So to keep things civil and neat, I always slice them in half. You don’t have to, but I do.
I chopped 1/4 cup of red onion and 1/4 cup of celery. Add 1 cup of coarsely chopped toasted pecans and 1/4 tsp black pepper. Toss with grapes. ( Reserve 1/4 cup pecans for garnish if you like, I forgot to!)
Mix together 4 oz of softened cream cheese, 1/2 cup sour cream, 1/2 white cup sugar. Combine with grape mixture.
At this point you may serve, or keep in refrigerator over night. The flavors do meld together beautifully overnight, but I had no complaints serving it the day I made it, either.
I accidently put all of my pecans in the mixture. I meant to reserve 1/4 cup to garnish the top…maybe next time I will remember.
This recipe will serve at least 8 if not 10, easily. It’s a wonderful accompaniment to any meal. Enjoy!
- 4 cups grapes, cut in half
- 4 oz Cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup sugar
- 1/4 cup chopped celery
- 1/4 cup finely chopped red onion
- 1/2 cup sugar
- 1 cup toasted pecans, toasted and coarsely chopped and divided
- 1/4 tsp black pepper
- Toss grapes, celery, onion, 3/4 cup of nuts and pepper in a bowl. Combine cream cheese, sour cream and sugar. Add to grape mixture and combine.
- Refrigerate until ready to serve. Flavors will enhance overnight. Garnish with reserved 1/4 cup of pecans.
