One of my all time favorite and easy and delicious things to make for lunch..or any  quick meal is Broccoli Sauced Eggs. I raised my children on this recipe. It is soooooo good. There are some dishes that eventually you out grow or learn to make something better in its place. That’s never happened with this recipe. It’s sooooo good. But, I said that already. The first time I ever made homemade chicken pot pie,  I was 22 years old. I was using a Good Housekeeping Cookbook and they didn’t leave out a single detail. Being a new cook, I wanted to be sure to get it right,  so I followed the instructions to the letter…. Roasted Pork Ham is one of my favorite meats to serve. It’s right up there with my Roasted Rump Roast! Unlike a Boston Butt or pork shoulder roast, a fresh Ham has a lot of lean meat and slices nicely.  It also makes the most FABULOUS gravy. I always cook a Roasted Fresh Pork Ham for  New Year’s Day meal. Several weeks ago I made Pumpkin Cheesecake Bars and afterward had half a can of pumpkin left over. Hating to waste the perfectly good Pumpkin,  I made Pumpkin Biscuits and they were a hit. Mind you,  all of my grandchildren were here and they can be picky about trying new things…not these. They loved them. So I made a bigger batch,  and once again…the kids were taking them home for their breakfast the next morning.

I love it because of all the dishes I can make from the leftovers.  Over the course of the next week I can count on having enough slices of meat for dinner and enough meat to make a chicken salad or casserole.
