One of my all time favorite and easy and delicious things to make for lunch..or any quick meal is Broccoli Sauced Eggs. I raised my children on this recipe. It is soooooo good. There are some dishes that eventually you out grow or learn to make something better in its place. That’s never happened with this recipe. It’s sooooo good. But, I said that already. It’s convenient. As a rule, I normally have most of the ingredients. If I can’t think of anything to cook or I’m short on time, I make this. No one ever complains.
Cook the broccoli according to the directions on the box. I usually cook mine longer, until very tender. One regular sized box is enough for two adults. (I use 2-3 family sized boxes for the whole whole family. Boil one egg per person.) Empty cooked broccoli into a large bowl along with the sour cream, 2 boiled eggs
Chop the eggs and mix it all together. Add salt and pepper to taste.
Serve over toasted English muffin.
Garnish with a dusting of dill weed, if you like. I usually serve Broccoli Sauced Eggs with a fruit salad of some sort. Today I tossed watermelon and pineapple with a little white balsamic vinegar, olive oil, salt and pepper. Enjoy!
Ingredients
- 1 regular sized box of broccoli in cheese sauce from the freezer section.
- 2 hard boiled eggs
- 1/3 cup sour cream
- Salt and pepper to taste
- 2 buttered and toasted English muffin
Instructions
- Cook broccoli according to direction on the box. Or longer, if you're like me and prefer your broccoli more tender. Chop eggs. Mix all ingredients. Serve over buttered toasted English Muffins.
- This recipe serves 2 adults. For my family (5) I cook 2-3 family sized boxes of Broccoli in Cheese Sauce. Use one boiled egg per person. Increase sour cream to 2/3 cup. One English Muffin per person.
